Bacon Wrapped Spinach & Cheese Stuffed Chicken Breasts

When the first word in the recipe is bacon, you know it’s gonna be good… When you wrap bacon around a chicken breast stuffed with spinach and goat cheese, you know you’re gonna have to try this recipe!

You’ll need:

9 slices of thick cut bacon could be less depending on the size
3 or 4 boneless skinless chicken breasts depending on size, mine were a little larger so I used 3
2 cups fresh spinach
1 1/2 cups goat cheese
3 tablespoons low-fat cream cheese
2 tablespoons lemon juice

Preheat the oven to 375 degrees F. In a medium bowl mix together the spinach, goat cheese, cream cheese and lemon juice.

Using  a sharp knife slice a pocket in the side of your chicken breast, being careful not to cut all the way through. Fill the chicken pocket with the yummy spinach and goat cheese mixture. I have to admit I’ve been a bit reluctant to try goat cheese, not sure why. My husband mentioned he heard how good it was so I used it in this recipe. Goat cheese is creamy, has a mild taste and is perfect for this type of dish.

Wrap each piece of chicken with bacon so it’s completely covered. My bacon is peppered. Place them in an oil sprayed, foil lined, baking dish, (easier clean up) and place uncovered into the preheated oven.

Cook for 45 – 55 minutes or until the chicken juices run clear and the bacon is crisp. My chicken pieces were fairly large so they took closer to 55 minutes. You can also put them under the broiler to crisp the bacon. bacon-wrapped-spinach-goat-cheese-stuffed-chicken-breasts-12

I love how they turned out. I think these would be perfect for when I’m having friends over for dinner. They are made with only a few ingredients and can be assembled ahead of time. Super simple that’s what I like!

The filling was delicious. Next time I may increase the amounts a bit. I like cheese and spinach. 🙂
