Crunchy Noodle Coleslaw

Today I am reviving an old post of a favorite recipe of mine. Crunchy Noodle Cole Slaw. I am going through all of the older ones to see if I want to update them in any way. This one looked pretty good and since it’s almost Earth Day I decided to recycle this recipe. 🙂
Have you eaten ramen noodles? I used to be addicted to them, lol. Not anymore thank goodness. I still purchase them occasionally when I want to make this delicious summer salad. It’s so simple to make. When I take it to BBQ’s everyone always asks for the recipe so be prepared.
You’ll need:
1 (16 ounces) bag coleslaw mix or one small head of cabbage
1/2 cup sunflower seeds
1 (3 ounces) ramen noodles (any flavor, you won’t be using the seasoning packets so it doesn’t matter)
2 green onions
1/2 cup olive oil
1/4 cup cider vinegar
1/4 cup sucanat/sugar
Before you open the ramen noodles take a rolling pin or something else and smash the dry noodles. They smash easily.I was able to get my green onions from my garden use as many as you want, I used three.Dice up the onions using all of the stems.
In a small bowl whisk together the extra virgin olive oil, apple cider vinegar and sugar. Set aside.In a large bowl mix together the coleslaw mix, green onions, and sunflower seeds. Add the wet ingredients to the dry ingredients. 🙂 Mix together.Chill and serve.
