My garden is overflowing with heirloom crooked neck yellow squash. So today I’m sharing the easiest squash recipe. Summer Squash Sauteed with Onions & Garlic.
Summer Squash Sauteed with Onions & Garlic
1 large Yellow summer squash
1/2 cup diced Vidalia onion
2 cloves minced garlic
2 tablespoons olive oil
salt and pepper
Cut the ends off of the summer squash. Cut into small bite size pieces
Dice up a 1/2 cup of onion
Mince 2 cloves of garlic
Heat oil over medium-high heat in a large fry pan.
Add the garlic and onion, saute for a couple minutes.
Add the summer squash, saute for several minutes or until tender.
Salt and pepper to taste.
