Simple Summer Salad

One of my favorite parts of summer is when the cucumbers plants start producing all those delicious cucumbers. Once they start producing look out, you will have plenty. We eat them almost every day in the summer. Today I am sharing a recipe using cucumbers. It’s easy to make but, so delicious. All the ingredients can be grown in your own backyard garden.

You’ll need:

1 cucumber

1/2 medium sweet onion

1 tomato

2 cloves garlic

a handful of fresh basil

3/4 cup extra virgin olive oil

1/4 cup champagne vinegar

In a medium bowl add diced cucumber

add diced sweet onion

add diced tomatoes

add minced garlic

add chopped fresh basil and mix

In a small jar add 1/4 cup champagne vinegar and 1/2 cup extra virgin olive oil. If you want to make less dressing use a 1 – 3 ratio. 1 part vinegar and 3 parts olive oil. I always make extra to use at a later time. It will keep a couple weeks in the refrigerator.

  

Shake and pour over the salad right before you eat it. You can really taste the all the fresh vegetables when you use a simple vinaigrette dressing. Great simple summer salad 🙂

Ingredients

  • 1 large cucumber

Instructions

  1. In a medium bowl add diced cucumber
  2. Add diced sweet onion.

  3. Add diced tomato.

  4. Add minced garlic.

  5. Add fresh basil.
