I am a nibbler. I like to eat small amounts of food all through the day. I try to make the foods I like to eat healthy, but they need to taste good too. I really like garbanzo beans in my salad. They are even tastier when they are oven roasted, It’s easy and you can make them any flavor you want. The best part is that they are an excellent source of iron, folate, phosphorus, protein and dietary fiber. Plus they are low in fat. This recipe makes them crunchy and sweet.
You’ll need:
1 15 ounce can garbanzo beans (chickpeas)
2 teaspoon sucanat/sugar
1 teaspoon ground cinnamon
1 Tablespoon olive oil
Drain and rinse the beans.
Pat dry.
Spread out on a parchment lined baking sheet.
Roast in a preheated 400 degree oven for 20 minutes.
Remove from the oven and drizzle the oil over the beans and stir them to coat the beans. I put mine in a bowl to make sure they were evenly coated, then put them bake on the baking sheet.
Combine the sugar and cinnamon together in a small bowl.
Sprinkle over the oil coated beans.
Roast in the oven another 15 to 20 minutes or until crisp. Make sure you keep an eye on them during this time so they don’t burn. I shook the pan several times so they would not burn.
Store them in an airtight container.
