Salmon Patties

When I was growing up, on Friday we had fish. I can remember the aroma of my mom frying salmon patties. They were so good, moist on the inside and crispy on the outside. For some reason, I have never made them. I looked through my mom’s recipes and couldn’t find hers so I did a so made them from memory using ingredients I would normally use on any given day, like my favorite garlic seasoning and panko bread crumbs. The best part making these was my house smelled like my childhood. If I closed my eyes I could see my mom standing at the stove making them and my dad sitting in his chair in front of the t.v. waiting for them to be ready. They turned out great, my husband loved them. Handle them carefully they can be crumbly at first. 🙂
You’ll need:
14 ounces of salmon (I used 2 – 7-ounce cans of boneless salmon)
1 egg
1 cup panko bread crumbs + 2-3 tablespoons for coating
1/2 cup diced onion
1/2 teaspoon garlic seasoning optional
1/4 teaspoon pepper
salt
First, drain the salmon. Reserve the liquid in case the patties are too crumbly to handle.
Using your hands combine the salmon, egg, bread crumbs, onion, garlic, pepper and
salt.
Separate into 4 equal size balls.
In a large skillet heat the oil over medium-high heat.
Flatten each ball carefully, if they are crumbly add some of the reserved liquid.
Coat with the extra panko bread crumbs.
Carefully add the coated patties to the heated oil.
Cook for about 8 minutes per side.
Until both sides are brown and crispy.
We thought they tasted perfect without a sauce.
