I make potato salad at almost every cookout or family gathering we have. I thought I would try something different and make a roasted potato salad with bacon. Who doesn’t love bacon?
It made a delicious difference in the taste. Tasted a bit like a baked potato with all the fix in’s, everyone loved it! Here is what I did.
You’ll need:
2 pounds of potatoes I used homegrown small white
3 boiled eggs diced
1/2 stalk of celery diced
1 cup mayonnaise
olive oil salt and pepper
pickles and onions optional
In a medium size bowl toss your diced potatoes with olive oil and sprinkle with salt and pepper.
Roast in a preheated 350 F degree oven for 20 to 30 minutes or until tender.
Put them into a clean medium size bowl when cool.
Cook up your bacon until nice and crisp. Try my recipe for Perfectly Cooked Bacon. 🙂
Add the diced up boiled eggs, diced celery, crumbled bacon and mayonnaise to the potatoes.
Mix well and chill for at least 2 hours. I make my potato salad the day before, it always seems to taste better the next day. Enjoy!
