Pescado Veracruzano & Salmon Recipes Cooked in Ready. Chef. Go!™ Cooking Bags

I have to admit I was a little skeptical when I started using the Ready. Chef. Go!™ Cooking bags! Seemed to good to be true. They asked me to pick one of the recipes that they provide, I chose one that I had never made, or heard of before, Pescado Veracruzano. Sounds fancy doesn’t it? It was so simple to make and clean up was a breeze!

You’ll need:

4 chicken breasts boneless
4 garlic cloves minced
1 cup manzanilla olives or green olives pitted and sliced in half
salt and freshly ground pepper
3 tablespoons of olive oil
1/4 sliced pickled jalapenos
1 small onion chopped
1 1/2 cups crushed tomatoes with juice
2 bay leaves
1 teaspoon dried oregano

Coat both sides of the chicken with the salt, pepper and oregano.

Put 2 breasts into each cooking bag. I placed the bags on a baking tray.

IMG_1690Combine the rest of the ingredients.

Place the mixture on top of the chicken inside the cooking bags. Seal.

Bake both bags in a preheated 350 degrees F oven for 20 to 25 minutes. Or in the microwave for 3 1/2 to 4 minutes each.

Here are a few facts about Ready. Chef. Go!™ bags. They were inspired by an old French cooking tradition of “en papillote”, a method of steam cooking food in a sheet of folded and sealed parchment paper. They take the guess-work out of cooking and are designed to be used in a Microwave or Oven. In the microwave, you can cook an entire meal in as fast as 3 minutes.
Locks in flavors and juices. Can be refrigerated or frozen for later use. Eliminates mess and clean up. Ready. Chef. Go!™ help contain cooking odors and are made from parchment paper and heat-resistant, BPA-free polyester film.

On the next recipe which is my own, I decided to make salmon and cook it in the microwave.

You’ll need:
2 pieces of salmon
2 cloves of garlic cut in half
1 tablespoon brown sugar
1 tablespoon soy sauce
1 tablespoon lemon juice
2 slices of fresh lemon
1 sprig of fresh parsley

In a small bowl mix together the brown sugar, soy sauce, and lemon juice.

IMG_2009Place the salmon pieces in the Ready. Chef. Go! cooking bag.
Pour the sauce over the salmon, top with garlic, lemon slices, and parsley. Seal bag.

IMG_2024Place the bag in the microwave and cook 3 -4 minutes depending on the power of the microwave.

IMG_2030That’s all there is to it. The salmon was tender, juicy and delicious. Super simple.
