I bought green beans last week and was wondering if I could roast them like I do sugar snap peas. I used what I had on hand which was garden-fresh scallions to roast with the fresh green beans.
You’ll need:
A couple of hands full of fresh green beans
about 8 scallions mine were small so I used 14
2 – 3 Tablespoon extra virgin oil oil
1/4 cup fresh Parmesan
Cut the ends off the beans and rinse.
Cut the ends off of the scallions and rinse.
Put green beans and scallions in a bowl
Sprinkle olive oil and garlic powder on the green beans and scallions. Mix until coated.
Spread out on a baking sheet. I lined mine with parchment paper.
Bake in preheated 350 F oven for 20 -25 minutes. I stirred mine at 15 minutes. They are done when they are tender and browned a little bit.
Toss with Parmesan cheese and serve.
They were very good. Easy to make. I love my fresh veggies. I am always looking for different ways to cook them. Do you have a special way you cook your garden-fresh green beans?
