Mozzarella Cheese Stuffed Meatloaf

Who doesn’t love melted cheese? I know we sure do, that’s why I decided to make a Mozzarella Cheese Stuffed Meatloaf.
Been a little scarce lately because it’s summer and I want to be outside all the time! But since I finally upgraded my laptop I’m able to sit outside and work. It’s been heaven on earth and I am actually getting things accomplished so stayed tuned!
I made this meatloaf a few days ago and it was quite tasty, we love meatloaf so adding the cheese was a no brainer. My plan wasn’t to add this Mozzarella Cheese Stuffed Meatloaf recipe to the blog but decided halfway through that it was too good not to share. I apologize for the photos being only mediocre. Trust me the meatloaf is not.
Preheat the oven 350° F.
In a large bowl gently mix all the ingredients except the cheese and ketchup.
Separate the meat mixture into 2 portions.
Spread half into the 9 x 5 loaf pan. I made a small well in the center of the loaf for the cheese. Don’t want to forget the cheese!
Place the cheese in the well.
Top with the other half of the meat, making sure you are able to seal the meat together on the sides, enclosing the cheese.
I used mozzarella slices in mine but you can use shredded if you prefer.
Top with ketchup, as little or as much as you like.
Let the meatloaf sit for about 10 minutes before serving.
The best part is when you slice open the meatloaf and all the gooey melted cheese oozes out…yummy!

- 2 pounds of lean ground beef
- 1 egg
- 1 cup panko bread crumbs
- 1 teaspoon fresh oregano
- 1/2 cup diced sweet onion
- 1/2 teaspoon sea salt
- 1/2 teaspoon pepper
- 2 tablespoons Worcestershire sauce
- 8 ounces mozzarella cheese
- ketchup

Cook uncovered for 50 – 55 minutes, or until the temperature reaches 160.

Let the meatloaf sit for about 10 minutes before serving.
