How about a slice of this simple Lemon Pineapple Cake with Cream Cheese Frosting? Using a boxed lemon cake mix makes it easy, and the pineapple makes it’s extra moist. The best part of it all is my husband made it!
Lemon Pineapple Cake with Cream Cheese Frosting
Since I’ve been stationary laying on my back, my husband John has been doing just about everything around the house. I usually do a fair amount of baking during the holidays but not this year.
I didn’t get all the pictures that I usually would. I wasn’t planning on sharing the Lemon cake until I saw how excited John was about making his creation. It was so cute.
Lemon Pineapple Cake
You’ll need:
- 1 Lemon cake mix
- 1 cup canola oil
- 3 eggs
- Whip the eggs for a couple of minutes until fluffy
- Combine with the other ingredients and mix
- Beat on medium speed for 2 minutes
- Add the crushed pineapple
- Oil and flour a 9 x 12-inch cake pan
- Pour in the cake batter
- Bake in preheated 350-degree oven for 40 to 45 minutes or until a toothpick inserted into the center of the cake comes out clean
Cream Cheese Frosting
You’ll need:
- 1 – 8 ounce package of cream cheese
- 1 tsp pure vanilla extract
- 4 cups powdered sugar
- 1 tbsp water
- Add the cream cheese and butter to a bowl and mix.
- Next, add the vanilla
- Slowly add the powdered sugar, careful it doesn’t fly all over the place. Believe me, it’s easy to do.
- Add the water as needed to get the right consistency

Ingredients
Lemon Cake
- 1 box lemon cake mix
- 8 ounces pineapple mashed
- 1 cup extra virgin olive oil
- 3 large eggs beaten
Cream Cheese Frosting
- 8 ounces package cream cheese softened
- 1 tsp vanilla extract pure vaniila
- 1 tbsp water
- 4 cups powdered sugar
- 4 tbsp butter softened
Instructions

Oil and flour a 9 x 12-inch cake pan

- Using a boxed mix is really smart and very affordable. The quality of the ingredients matches what I would choose. Plus, you can usually find them on sale. I like to keep a few on hand.
- Use a good quality cake pan. It really does make a difference.
- Don’t skip the step where you whip the eggs for a couple of minutes. Your cake will be fluffier. You’ll notice a difference.
