Do you love the taste of take-out food as much as I do? I decided to get a little creative and make this Spicy Vegetable Yakisoba Stir-Fry at home. Guess what? It was a huge success! Lots of vegetables, delicious soba noodles, and a sweet and savory sauce. Topped with thinly sliced green onions.

Yakisoba Stir Fry
Yakisoba “fried noodles” is a Japanese stir fry noodle dish. Soba means buckwheat, but in Yakisoba, it means Chinese noodles made with wheat flour and flavored with a sauce.
Fortune makes these delicious, authentic Yakisoba Stir Fry Noodles. They are so good! The noodles are pre-cooked, steamed, cholesterol-free, and microwaveable. Includes a sauce packet that you mix with water for the authentic flavoring. I chose the “hot and spicy flavor” and it definitely had a little kick in the sauce which my husband loved!

Yakisoba Stir Fry
Ingredients
- 1 tsp olive oil extra virgin
- 4 green onions Thinly chopped
- 1 medium zucchini cut into thin slices
- 1 medium yellow squash cut into thin slices
- 1 pound Turkey sausage cut into thin slices
- 1 package Spicy Yakisoba noodles
- 1 cup green beans fresh thinly sliced
Instructions
- In a large skillet heat the extra virgin olive oil over medium heat.
- Add the sliced turkey sausage, sliced zucchini, yellow squash, and the green beans. Saute for 5 to 10 minutes, stirring often.
- While the vegetables are sautéing open the Fortune Noodle package and remove the noodles and the sauce packet.
- Combine the sauce packet with 1/2 cup of water and set aside.
- Open up the noodles and rinse with hot water in a colander. You can break them into smaller pieces if you prefer.
- Add the Yakisoba noodles and the sauce to the skillet. Stir and cook for another 5 minutes or until hot 165 F
- Serve and enjoy!
