A Seasoned Pork Roast and Vegetables Recipe in the Slow Cooker, add Vegetables and it’s a complete one pot dinner. It’s simple to make and tastes scrumptious. The seasoned pork roast comes out fork tender and oh so juicy! You can use any variation of pork roast. I was able to get this nice rolled pork roast for an excellent price. It has a combination of light and dark meat and is boneless.

It feels like spring today here in Ohio, but it’s not, it’s still winter. Even though today it’s 70 degrees outside, tomorrow it’ll be in the 30’s so I’m going to bring out my slow cooker and cook the pork roast.  Now on to the recipe.

Add the carrots, potatoes, onion and brussel sprouts into the bottom of the slow cooker.
Season with garlic powder, salt, and pepper.

Place the pork roast on top of the vegetables and season with garlic powder, salt, and pepper. Cook on low setting for 8 hours.

When the pork roast is done lift it out of the slow cooker and set aside to slice. If your roast is wrapped with a string, cut it off carefully, watch out it’s hot!

Spoon the vegetables onto a platter with the roast and pour the remaining juice over the seasoned pork roast and vegetables.

Ingredients

  • 2 lb rolled pork roast or any cut you prefer
  • 3 or 4 sliced carrots
  • 1 lb Brussel sprouts
  • 3 large potatoes cut into bite-size pieces
  • 1 medium onion cut into bite-size pieces
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 pepper

Instructions

  1. Add the carrots, potatoes, onion and Brussel sprouts into the bottom of the slow cooker.
