I am a huge fan of stir-fries. They are easy to prepare and this dish is loaded with fresh broccoli, which we love. Stir fry is a Chinese cooking technique using a small amount of hot oil in a wok to quickly cook meats and vegetables. You can use any variety of vegetables and/or meats to create your own version of this stir fry.

You’ll need:
1 1/2 pounds pork loin cubed
1 sweet onion chopped
4 cups broccoli flowerets chopped
2 tablespoons extra virgin olive oil
2 tablespoons Rice vinegar
1 tablespoon soy sauce
2 tablespoons Hoisin sauce

In a large skillet or wok heat the oil over medium-high heat. Saute the pork until internal temp of 140 F. Remove from the skillet and set aside.
Broccoli & Pork Stir Fry 2Add the broccoli and onion to the skillet and saute until cooked stirring constantly.  Add the rice vinegar and soy sauce. Cook until desired tenderness about 5 to 10 minutes.Broccoli & Pork Stir Fry 3Add the pork into the skillet with the broccoli and onion. add the Hoisin sauce and mix. Cook until warmed through.
