My husband and I eat tons of fresh vegetables, especially when the weather gets warmer. We love this creamy cucumber tomato salad or some variation to it. It’s simple to put together at the end of a busy day, plus it tastes delicious!
Sorry, I’ve been a little scarce lately. I have a difficult time staying indoors. The sunshine calls me outside to enjoy her golden rays of warmth. I’ve been hiking, gardening, burning yard waste, (I enjoy making a fire) and spending time with family and friends. Over the holiday weekend, my husband and I spent our time cutting back several overgrown lilac bushes. It looks better already! I have also been spending a lot amount of time with my grandkids. Oh, I almost forgot to add my job at the chiropractor’s office!
I hope you enjoy the recipe as much as we do. I’m going to go get ready to watch my grandson in his last soccer game. It is so much fun watching 5 and 6-year-olds play soccer.
Creamy Cucumber Tomato Salad
Ingredients
- 2 cucumbers average size, cut into bite size pieces
- 6 small tomatoes, diced
- 1 ear of corn, cooked, off the cob
- 1 cup of chopped broccoli
- 1/2 cup sweet white onion, diced
- 1/4 cup ranch dressing
- 2 tablespoons Italian dressing
- 1/2 teaspoon garlic powder
- salt and pepper to your taste
Instructions
- Combine everything in a medium bowl and mix. Eat right away or chill to eat later.
- That's all there is to it. Sometimes I make my own dressing or I use one of my many favorites. I like to mix dressing flavors together, you never know what you're gonna get, but it's usually pretty darned good.
Are there any variations that you would make to my creamy cucumber tomato salad?
