Grilled Asparagus Salad

Today I want to share a light fresh spring salad. A grilled asparagus sald.
Grilled Asparagus Salad
It’s fresh asparagus season! That makes me so happy. Spring means fresh vegetables and one of the first ones available locally in my area are asparagus. I love the flavor of asparagus and I like this recipe because it doesn’t overpower the flavor of the asparagus. I added Hemp Hearts (shelled hemp seeds) to this recipe, I had never tried them. The hemp seeds are optional, you can add sunflower seeds or slivered almonds. Hemp hearts are the most concentrated and best-balanced source of proteins, essential fats and vitamins in nature according to some studies. They are teeny tiny seeds and have a nutty flavor. I also used Garlic Infused olive oil.
Ingredients
- Assorted leaf lettuce and or baby spinach, I used both.
- 1/4 cup olive oil ~ I used Garlic Infused
- 1 tablespoon Hemp Hearts ~ you can use slivered almonds or sunflower seeds
- Fresh grated Parmesan cheese
Instructions
- Put the lettuce and spinach in a large bowl and set aside
- Place your cleaned asparagus on a plate and drizzle with the olive oil. Make sure they are completely coated.
- When you grill is nice and hot roast them over the coal for about 5 minutes on each side. Until crispy tender and slightly charred. You can also roast the asparagus in the oven if you aren't able to grill them outside.
- Place the grilled asparagus back onto the same plate. Cut into pieces.
- Thoroughly toss the asparagus pieces with the mixed greens.
- Sprinkle with the hemp heart and Parmesan cheese.
When you grill is nice and hot roast them over the coal for about 5 minutes on each side. Until crispy tender and slightly charred. You can also roast the asparagus in the oven if you aren’t able to grill them outside.
Place the grilled asparagus back onto the same plate. Cut into pieces.
Thoroughly toss the asparagus pieces with the mixed greens.
Sprinkle with the hemp heart and Parmesan cheese.
It’s amazing how you don’t need any other dressing.
