Sweet Italian Sausage in the Slow Cooker & Quinoa

Today I want to share with you one of my new favorite sides quinoa. Gluten free and richer in nutrients then rice,or potatoes. Quinoa is pronounced (/ˈkiːnwɑː/, is actually a pseudocereal, that’s a word used to describe edible seeds or fruits that can double as grains. Weird huh? Many of the ancient grains are in this family, such as chia seeds and buckwh.eat. Because it contains all 9 essential amino acids your body needs, it’s one of the few vegetarian foods that counts as a complete protein. Pseudocereals are absorbs more slowly so your blood sugar stays on an even level and that is important
I love the texture, I’m big on textures of food. It’s a little chewy and has a slight buttery flavor. A small amount of quinoa is very filling. I can’t eat as much as when I am serving rice. Very high in fiber that must be why. If you haven’t given quinoa a try, please do. If you like rice you’ll love quinoa.
You’ll need:
1 package of sweet Italian sausage
2 15 ounce cans of diced tomatoes
1 small onion
1 yellow pepper
2 cloves of garlic
1 teaspoon garlic and onion seasoning
2 cups quinoa
Place the Italian sausage in the slow cooker
Cut up the onion, pepper and mince the cloves of garlic, place them on top of the sausages.
Pour the canned diced tomatoes on top and sprinkle was garlic and onion seasoning, I use Weber organic brand.
Cover and cook on low for 6 – 8 hours.
Cook your quinoa. 2 to 1 water quinoa ratio.
I used 1 cup quinoa and 2 cups of water, bring to a boil. Reduce heat to low cover and simmer for 15 minutes.
When your sausage and peppers are ready pour over the quinoa and serve.
