Cut up the onion, pepper and mince the cloves of garlic, place them on top of the sausages.
Pour the canned diced tomatoes on top and sprinkle was garlic and onion seasoning, I use Weber organic brand.
Cover and cook on low for 6 - 8 hours.
Cook your quinoa. 2 to 1 water quinoa ratio. I used 1 cup quinoa and 2 cups of water, bring to a boil. Reduce heat to low cover and simmer for 15 minutes.
When your sausage and peppers are ready pour over the quinoa and serve.
