I am a big fan of Chinese food and pasta of any kind. That makes Lo Mein a perfect food for me. I had never cooked Chinese noodles at home. I thought they were great, a little chewier than regular pasta.e ven my husband who isn’t as big of a fan of pasta liked them. I make stir fry all the time each time the veggies may be a little different, it depends on what I have on hand or what was on sale this week. This is a super simple recipe and is heart healthy.

You’ll need:
1 1/2 lbs of boneless pork loin
1 cup broccoli crowns
1/2 head cabbage thinly sliced
3 green onions sliced
2 cloves garlic minced
1 tablespoon minced or grated fresh ginger
3 tablespoons reduced sodium soy sauce
2 tablespoons garlic infused rice vinegar
1 tablespoon honey
2 tablespoons of oil

In a small bowl whisk together garlic, ginger, soy sauce, rice vinegar and honey.

Thinly slice pork loin into bite size pieces. I do this when it is still partially frozen. It’s easier to slice.

Bring a pot of water to boil and cook the Chinese noodles. Drain and set aside.

In a large fry pan heat the oil over medium high heat. Add the sliced pork and cook until no longer pink. Remove from pan, cover and set aside.

 Add the onion, garlic, broccoli and cabbage into the pan and saute slowly adding the sauce as you go. Cook until tender.

 Add the cooked pork, Serve over the cooked noodles.
