Pork Lo Mein

Ingredients
  • 1½ lbs of boneless pork loin
  • 1 cup broccoli crowns
  • ½ head cabbage thinly sliced
  • 3 green onions sliced
  • 2 cloves garlic minced
  • 1 tablespoon minced or grated fresh ginger
  • 3 tablespoons reduced sodium soy sauce
  • 2 tablespoons garlic infused rice vinegar
  • 1 tablespoon honey
  • 2 tablespoons of oil
Instructions
  1. In a small bowl whisk together garlic, ginger, soy sauce, rice vinegar and honey.
  2. Thinly slice pork loin into bite size pieces. I do this when it is still partially frozen. It's easier to slice.
  3. Bring a pot of water to boil and cook the Chinese noodles. Drain and set aside.
  4. In a large fry pan heat the oil over medium high heat. Add the sliced pork and cook until no longer pink. Remove from pan, cover and set aside.
  5. Add the onion, garlic, broccoli and cabbage into the pan and saute slowly adding the sauce as you go.
  6. Cook until tender.
  7. Add the cooked pork, Serve over the cooked noodles.
