Today Katie and I decided we would do a little baking. She loves chocolate icing and wanted to make that but I explained to her that we needed to make something to put under the icing. Not that I haven’t eaten more than my fair share of icing all by itself. I’m not ready to share that with Katie yet. So we decided to make simple vanilla cupcakes. We made them using freshly milled hard white wheat flour.
In a small bowl whisk together flour, baking powder, and salt.
In a large bowl beat butter until smooth.
Add sucanat/sugar until fluffy. It takes a couple minutes. When using sucanat it may take a little longer to make it fluffy because the granules are larger than processed white sugar.
Add egg whites and beat well
Beat in vanilla.
On low beat in half the flour mixture. Careful it doesn’t go everywhere, Katie! She loves to stick her fingers in as we add ingredients. No tasting the flour Katie…you won’t like it.
Beat in 3/4 cup water.
Add the rest of the flour and beat well.
Scoop into cupcake holders.About 3/4 full. If you spray the scoop with a little oil the batter doesn’t stick to the scoop. 🙂
Bake in preheated 325 F oven for about 18 – 20 minutes. Until a toothpick comes out clean 🙂
We made my homemade chocolate icing of course. The only part Katie really likes. She wants a little cupcake with her icing. She certainly is related to me…giggle.
