Spinach and mushrooms, two of my favorite foods to eat, especially when they are together. This recipe calls for frozen spinach but fresh would be even better.
2 packages frozen spinach
8 ounce package of fresh mushrooms. I used mini bella mushrooms. My favorite.
a few green onions
2 – 3 cloves fresh garlic
fresh Parmesan cheese
In a skillet heat up a couple tablespoons of olive oil. Add the sliced mushrooms, onion and garlic. Saute for a couple minutes.
Add the thawed and drained spinach to the skillet. Mix it up and heat through.
Sprinkle with the fresh Parmesan cheese and serve. Pretty simple and it tastes great.
