As you can tell by the name of the post my husband and I are still sticking to heart-healthy recipes. Well… mostly we are sticking to it. 🙂
Skinny Mini Apple Pie Recipe
I wasn’t sure how the recipe was going to turn out but, we were pleasantly surprised. They were plenty sweet enough, and the texture of the oatmeal was scrumptious!
Ingredients
- Pie crust, I used store bought 2 crusts
- 6 to 8 medium-size granny smith apples, peeled and cored
- 1/2 teaspoon of cinnamon
- 1/4 cup organic sugar, I used coconut sugar
- 2 tablespoons whole wheat flour/white flour
- 1 tablespoon of lemon juice
- Topping
- 3/4 cup organic quick oats
- 3/4 cup whole wheat flour/white flour
- 1/2 teaspoon cinnamon
- 4 tablespoons butter chilled and diced
Instructions
- In a large bowl mix together the apples, lemon juice, sugar, cinnamon, and flour until evenly coated.
- I used my 1 cup measuring cup to make small circles for the mini crusts.
- Fill with the apple mixture.
- In a small bowl combine the quick oats, flour, cinnamon and chilled diced butter. Mix until crumbly.
- Top the apples with the oatmeal mixture.
- Bake in a preheated 375-degree oven for 15 - 20 minutes, rotate the pan and bake an additional 5 - 10 minutes or until bubbly and brown.
In a large bowl mix together the apples, lemon juice, sugar, cinnamon, and flour until evenly coated.
I used my 1 cup measuring cup to make small circles for the mini crusts. You can use anything that you have around the house that will make a circle.
Spray the pan with oil and place a mini crust into each cupcake.
Fill with the apples.

Top the apples with the oatmeal mixture.
