One of my favorite things about summer is all the fresh produce I have on hand. Once the peppers and tomatoes start coming in I usually have plenty so I always make this simple summer salsa. We eat it every day as a snack with some tortilla scoops. Even is you don;t have your own garden you can buy fresh produce and make this salsa. When I have an over abundance of tomatoes and peppers I will make this salsa and can it up for winter. We like our salsa chunky and hot. You can adjust the amount of each vegetable to your tastes.
You’ll need:
4 large tomatoes
2 peppers
1 hot pepper
1 medium onion
4 cloves garlic
a couple tablespoons fresh cilantro

Dice and chop the tomatoes, peppers, onion and garlic. When dicing up the hot pepper make sure you wear gloves. Even be careful breathing in the fumes if it’s a really hot one. ( You can substitute cayenne pepper for a fresh pepper if you’d like ).

Add some chopped cilantro and mix.

Chill for a couple hours before serving. You can keep this in the refrigerator for a week or so. Enjoy 🙂
