Simple Roasted Corn Salsa
This recipe is so simple to make and full of fresh summer vegetables. Roasted corn salsa is extra sweet because the corn is roasted which makes the corn taste sweeter.
3 ears roasted corn on the cob or 2 1/2 cups corn (cut off the cob )
1 cup red pepper diced about 1 large
1 cup Vidalia onion diced about 1 medium
1 tablespoon lime juice
1 tablespoon chopped cilantro or parsley which I prefer
salt and pepper to taste
Combine all of the above ingredients in a small bowl. Mix.
It doesn’t get much simpler than this. 🙂 It’ll last a few days in the refrigerator, it even tastes better after a day or so. That’s my husband’s opinion as he was finishing the last bite on the fourth day. 🙂
