Lasagna Casserole

This recipe is called lasagna casserole because it tastes like lasagna but without the lasagna noodles. I guess I should really call it something else since I am using rotini noodles. If I call it rotini casserole you really wouldn’t know what it was. So I think I’ll stick with lasagna casserole. Anyway this really is easy and you don’t have to fuss with the long lasagna pasta. You can substitute any shape pasta you have on hand 🙂
You’ll need:
12 oz Pasta cooked, rotini in my case
1 lb ground beef or ground turkey
15 ounce Ricotta cheese
4 cups Mozzarella cheese
1/2 cup Parmesan
6 fresh tomatoes diced or your favorite pasta sauce
1 small onion diced
3 cloves garlic minced
2 eggs
1 teaspoon parsley flakes
olive oil
In a dutch oven or large fry pan saute the onions and garlic in a little olive oil over medium heat.
Add your ground meat and brown until cooked through.
Add your tomatoes or pasta sauce.
In a small bowl beat the eggs. Add the ricotta cheese.
Mix it up and add the Parmesan cheese and parsley flakes.
Spread a layer of the sauce on the bottom of the pan.
Spread half the cooked pasta over the sauce.
Spread half the cheese mixture over the cooked pasta.
Sprinkle with 1 1/2 cups mozzarella cheese.
Cover with another layer of meat sauce.
Top with cheese mixture and 1 1/2 cups mozzarella cheese. Cover with foil and bake in a preheated 350 F oven for 55 minutes.
Uncover and sprinkle with remaining mozzarella cheese. Bake an additional 5 minutes or until the cheese is brown and bubbly. Let stand 15 minutes before you cut.
