Grilled Pineapple

Summertime grilling is one of my favorite things to do. I like to cook as many things as I can on the grill. It’s amazing how grilling will enhance the flavors of fruits and vegetables. I want to share with you a simple recipe /idea to add to your back yard grilling menu. Here’s what you need.
1 whole pineapple

There is nothing like fresh pineapple. It looks intimidating in the produce department. It is really very easy to cut. I will show you how easy it is.
Cut the bottom off of you pineapple using a sharp chef’s knife
Cut off the top.
Stand fruit up and cut off the skin off following the curve of the fruit.
Using a small paring knife cut out all hard brown spots.
Cut into 1/2 inch slices.
Using a paring knife or small cookie cutter carefully cut center core out.
Cook on a hot grill 2 – 3 minutes per side. Depending on how hot the coals are.
They are so extra sweet this way. And they look so pretty on your plate. This is a healthy side dish that will also satisfy your sweet tooth.
I didn’t grill the whole pineapple. I cut part into chunks for a quick snack during the week, and I also froze some chunks to make fruit smoothies. Yummy 🙂
