Oven Roasted Potatoes with Garlic

April is such a busy month for me, I haven’t been posting as many recipes these past few weeks, I’ve been getting outside as much as I can. Hurrah for spring! The weather in Ohio has been up and down, and a bit rainy. It has warmed up, but I think we have a few cool nights still in our future. Today I want to share an easy but delicious way to prepare potatoes. Nothing fancy and you can have them ready in less than half an hour. Perfect addition for a busy weeknight meal.
You’ll need:
2 lbs yellow potatoes
2 tablespoons olive oil
1 teaspoon organic garlic and herb seasoning
1/4 cup Parmesan
Cut the potatoes into bite size pieces and place them into a medium bowl.
Coat the potatoes with the olive oil and seasoning.
Transfer to a baking sheet.
Bake in a preheated 425 F degree oven for 20 minutes or until the potatoes are fork tender, turning once after 10 minutes.
Remove from the oven and sprinkle with cheese.
