This recipe reminds me of the movie “Fried Green Tomatoes” a great movie if you haven’t seen it before.

When choosing your tomatoes, choose firm, green ones. They will be easier to slice and hold up to breading and frying.

You will need:

  1. Green tomatoes
  2. Flour
  3. egg
  4. panko bread crumbs
  5. salt
  6. pepper
  7. garlic powder (optional)

Sliced the tomato into 1/4 to 1/3 inch slices and set aside. In a small bowl. Stir the eggs until mixed. Combine the flour, salt, pepper, and garlic powder in a second small bowl. In another small bowl place the panko bread crumbs.

Dredge each slice of tomato through the egg flour egg and bread crumbs in that order.

In a large skillet heat the olive oil until over medium-high heat. Place each slice into the hot oil. Cook on each side until a nice crispy brown.

You don’t want to overcook them.

Drain on a paper towel. eat them while they are hot.

Today I paired them with scrambled eggs. Delicious!
