Sliced the tomato into 1/4 to 1/3 inch slices and set aside. In a small bowl. Stir the eggs until mixed. Combine the flour, salt, pepper, and garlic powder in a second small bowl. In another small bowl place the panko bread crumbs.
Dredge each slice of tomato through the egg flour egg and bread crumbs in that order.
In a large skillet heat the olive oil until over medium-high heat. Place each slice into the hot oil. Cook on each side until a nice crispy brown. You don't want to overcook them.
Drain on a paper towel. eat them while they are hot.
