I have always enjoyed cooking, but baking, not so much. My idea of homemade was opening a box adding eggs oil and water and bake. I always thought they tasted pretty good. I guess you don’t know what your missing until you have the real thing. Well my first attempt at baking a chocolate cake turned out surprisingly well. I was lucky enough to have my little grand daughter Katie as my assistant.

I found a recipe for chocolate cake here that I tweaked a bit. I also found the recipe for chocolate frosting here.

Chocolate Cake

2 cups white sugar ( I used Sucanat )

1 3/4 cups all purpose flour

3/4 cup unsweetened cocoa powder

1 1/2 tsp baking powder

1 1/2 tsp baking soda

1 tsp salt ( I used sea salt )

2 eggs

1 cup milk

1/2 cup oil ( I used melted expeller pressed coconut oil )

1 tbsp vanilla extract

1 cup boiling water

Preheat oven to 350 F. Grease and flour a 13 x 9 inch cake pan

In a large bowl mix sugar

flour

cocoa

baking powder, baking soda, salt

add eggs

milk, oil, and vanilla

mix on medium speed with mixer for 2 minutes

Stir in boiling water last ( batter will be thin )

Pour into cake pan

bake 30 minutes until tooth pick comes out clean

cool before frosting

Chocolate Frosting

4 cups confectioners sugar

9 tbsp unsweetened cocoa

9 tbsp salted butter

8 tbsp evaporated milk

2 tsp vanilla extract

sift the sugar and cocoa together

In a large bowl cream butter

slowly add sugar/cocoa mixture and milk to creamed butter, mixing as you go

add vanilla last

whip with a mixer on medium until fluffy

Isn’t that beautiful? The taste of the frosting was so good. My favorite part of any cake is the icing and this was so easy. I am a closet icing eater… Katie and I had our fair share of licks of this frosting. If you have never made frosting before you should give this a recipe a try.
