Chocolate Banana Bread with Carob Powder

Chocolate banana bread, what’s not to like? I love just about anything with chocolate, add some bananas and it makes it seem a little healthier, right? Oh well…that’s what I tell myself when a eat a big slice for breakfast. Actually in this recipe which I found here. I substituted the cocoa powder with Carob powder. Never heard of it? I won a contest over at It’s a Harley Life and one of the products was Carob Powder. I had never heard of it. So I did a Google search and found out what an amazing product this is. I was skeptical of course. I have heard this song and dance before. Sure it tastes like chocolate. 😉 I was pleasantly surprised. I was quite amazed, no one was able to tell the difference. It’s definitely going to be a staple in my home.
You’ll need:
1/2 cup butter, softened
1 cup Sucanat/sugar
2 eggs
3 bananas mashed
1 teaspoon vanilla extract
1/1/2 cups whole wheat flour/white flour
1 teaspoon baking soda,
2 tablespoon carob powder/ unsweetened cocoa
1/2 cup sour cream light
1/2 cup chocolate chips
In a bowl cream your butter, sugar, eggs and bananas together. Add vanilla extract and mix in.
Sift in the flour, baking soda, cocoa powder.
Mix until well blended.
Stir in sour cream.
Fold in chocolate chips.
Pour into a greased 9×5 loaf pan.
Bake in a preheated 350 F for 1 hour or a inserted toothpick comes out clean.
Cool and eat.
