Cantaloupe Salsa 1

Now that warm weather is here in Ohio, we like to eat lighter foods. The cantaloupe are very good and on sale this time of the year. In June we a have a cantaloupe variety called Honeyrock that are available for a limited time, usually about 2 weeks or so. Let me tell you they are so sweet! I will eat several in the next few weeks. I thought the sweetness would really compliment this recipe and it did.


I found a recipe and adapted to my liking. It’s only has a few fresh ingredients so it’s easy to make. I grew the onion and the cilantro in my garden.


You’ll need:

2 cups diced cantaloupe
2 cups diced cucumber
3 green onion sliced using white and some of the green
1/2 cup chopped cilantro

Mix all the above ingredients together and refrigerate. It’s best after it’s been sitting for at least an hour in the refrigerator. The flavors get a chance to blend together a little bit.

    We have the infamous Rocky Ford cantaloupe that is so sweet, so wonderful. It’s an end-of-summer arrival, and they’re snatched up incredibly fast.

    I’m now craving cantaloupe for breakfast. And cantaloupe salsa for lunch! 😀
