Cream Cheese Stuffed Strawberries

On Labor Day we had a 90th birthday party for my mother in law. Katie wanted to make something special for her great grandma’s birthday. We decided to make her some stuffed strawberries. We fell in love with this recipe when we first had them at my grand daughter’s baby shower a couple months ago. It’s an easy recipe. Katie was able to pipe in the filling herself. Only needed a little muscle from me.

My new grand son River was born 3 weeks ago. (He’s really my great grand son but that’s a long story I will tell you some day). My niece Samantha is very happy to meet little River too.
You’ll need:
1 pint fresh strawberries
1- 8 ounce package cream cheese softened
1/2 cup confectioners sugar
1 tsp vanilla extract
I first used the straw method to remove the core and leaves.
Make an X at the tip of the strawberry so you can spread it open and fill with filling. I spread them open if I can. Don’t force it. The filling with help expand the strawberry.
Beat together cream cheese, sugar and vanilla until smooth with a mixer.
Whip until smooth and creamy.
Make sure you stop and take a picture of your little helper.
Spoon into strawberries. I put it in a plastic bag and cut a small corner off so Katie could pipe it into the strawberries. Worked really well.
They aren’t the prettiest I’ve ever seen but they sure were good.
I made them that day. I’m not sure if I would make them the day ahead or not. They might get a little mushy if you do. They were a big hit!
