What makes this cauliflower recipe so special is the roasted cauliflower. Combined with cheddar cheese and cream cheese it makes a delicious low carb/keto side dish.

Cauliflower Cheese Bake Low Carb Recipe
You’ll need:
- 4 cups cauliflower
- 6 ounces package cream cheese
- 1 cup shredded cheddar cheese
- 1 tbsp olive oil
- salt and pepper
- After you have roasted the cauliflower add it to your 8×8 inch pan.
2. Add the softened cream cheese.
3. Mix with the roasted cauliflower.
4. Sprinkle with pepper and salt if desired.
5. Top with cheddar cheese.
6. Bake in a preheated 375 degrees F for 20 minutes or until it’s bubbling and the cheese is starting to brown.

Notes:
- For even roasting cut the cauliflower into even-sized pieces.
- Soften the cream cheese and cut into even-sized pieces for easier melting.
- This can be made the day before, you’ll need to cook it in the oven a bit longer.
- I use a thermometer to check the temperature, it needs to be 165 F.
