Simply Perfect Quinoa and Pineapple Side Dish

Quinoa, it’s all the rage and rightly so. It nutritious and it tastes scrumptious, pair quinoa with pineapple and you have a simply perfect quinoa and pineapple side dish.
My husband agreed to join me this year in eating a cleaner diet. I have always leaned toward eating this way but living with meat and potato man for over 35 years makes it a challenge. I have found one thing he likes and will eat in place of potatoes, it’s quinoa, (pronounced keen-wah)
You’ll need:
1 cup uncooked organic quinoa
1 cup pineapple juice
1/4 cup low sodium soy sauce
3 tablespoons sesame butter or any other nut butter
1 tablespoon oil
2 gloves of garlic minced
1/3 cup chopped green onion
1/3 cup frozen peas
1/3 cup chopped walnuts
1 cup chopped pineapple
In a small bowl combine the pineapple juice, soy sauce, nut butter and set aside.
Cook the quinoa according to the package directions. Heat the oil over a medium heat, add the onion and garlic and saute for a minute or two.
Toss in the peas.
Add the cooked quinoa and two-thirds of the sauce, stirring to coat evenly. Add the chopped pineapple, stir and wah la your finished!
