Creamy Broccoli Salad

We love eating raw vegetables, especially broccoli. I found this recipe for a creamy broccoli salad and adapted it to my liking. The broccoli absorbs the dressing, it’s a delicious combination of sweet and sour flavors. The bacon adds a nice flavor and crunch. This will make a great side dish for my Easter buffet.
You’ll need:
1 bunch broccoli cut into bite sized pieces
10 slices of bacon crumbled
1/4 cup sweet onion diced
1/2 cup red grapes cut in half
3 tablespoons rice vinegar or any vinegar you have will work fine
2 teaspoons sugar or 2 sugar substitute packets
3/4 cup reduced fat mayonnaise
In a medium bowl combine the broccoli, 1/2 the bacon, grapes, and onion together.
In a small bowl whisk together the vinegar, sugar, and mayonnaise.
Pour over the broccoli mixture and mix well.
Refrigerate at least a couple hours so the flavors marinate. Overnite is perfect.
Stir in the rest of the bacon right before serving.
