I really enjoy the flavor of lemon. The smell and taste is wonderful. I did a little searching and found a recipe for a nice lemon bread. I changed it to make it a little healthier using whole milled grains and applesauce instead of the oil. The recipe I chose said it is a variation of the Starbucks Lemon Loaf, which I have never tried but it sounds yummy.
You’ll need:
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon sea salt
3 eggs
1/2 cup. sucanat/sugar
1/2 cup local honey
2 Tablespoons. butter softened
1 teaspoon vanilla
2 teaspoon lemon extract
1/3 cup fresh lemon juice
1/2 cup applesauce I used my homemade
You’ll need for Glaze:
1 cup powdered sugar
2 tablespoons milk
1/2 teaspoon lemon extract
juice of 1/4 lemon more or less to desired consistency
Preheat oven to 350 F
In a small bowl combine eggs, sucant/sugar, honey, butter, vanilla, lemon extract and applesauce. Mix well with a hand mixer.
In another small bowl combine the flour, baking powder, baking soda and sea salt

Pour the dry ingredients into the wet and mix well.
Pour into a well greased loaf pan.
The original recipe said to bake for 45 minutes which, ugh I did and it overcooked it a little. Normally the time is under on these types of breads but not on this recipe. I would start checking after 35 minutes. This recipe calls for less butter that may be why it cooks faster. It is done when an inserted toothpick comes out clean.
Let cool. Now on to make the Lemon Glaze. In a small bowl combine the sugar, milk, lemon extract and lemon juice until the desired consistency.
Remove the cooled bread and spread the glaze over the bread so it drips down the sides. Looks so good.
