Spring is here, finally and around here it means that strawberries will be one sale. Plus before you know it, it’ll be time to pick your own. I can’t wait! Both my grand kids are old enough to help pick them this year.
I have been experimenting putting strawberries in different baked goods like cookies, which turned out now to be the most requested cookie by friends and family. This time I put the strawberries in bread. The bread turned out delicious. I always share my baked goods with the Doctor and his family. His youngest son rated them A+. He’s a picky eater doesn’t even like cheese!!!
I used local honey instead of sugar and my homemade applesauce in place of the oil.
You’ll need:
2 eggs
3/4 cup honey
3/4 cup diced strawberries
3/4 cup diced bananas
1 teaspoon vanilla
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon cinnamon
1/8 teaspoon nutmeg
In a large bowl combine the flour, baking soda, salt, cinnamon and nutmeg together.
In another bowl combine the eggs, honey, applesauce, vanilla, strawberries and bananas.
Mix it all together. I used a hand mixer for a couple minutes.
Pour into a greased loaf pan.
Bake in a preheated 350 degree oven for 25 minutes or until a tooth pick comes out clean.
Cool, slice and enjoy. 🙂
