Today I want to share a tasty little cookie recipe. I try to eat at least one banana a day, I love the flavor and texture of bananas. I encourage the grand kids to eat them but Ty starts to eat one and if it breaks he won’t eat anymore. He thinks it’s broken and shouldn’t be eaten. I have tried to convince him otherwise but if you know anything about 2 year old children they have a mind of their own. lol. So after a visit from the grand kids I usually have some leftover bananas which I use to make lots of banana goodies.
You’ll need:
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon cloves
1/4 teaspoon nutmeg
1/4 teaspoon salt
1/2 cup butter
1 cup sucanat/brown sugar
1 large egg
1 cup mashed banana (2-3 bananas)
Preheat the oven to 375 F,. Line baking sheets with parchment paper or spray lightly with oil
In a medium size bowl mix together the flour, baking powder, baking soda, cloves, nutmeg, and salt. Set aside
In another bowl beat the butter and sugar (sucanat is a tan color so my cookies look darker) together with an electric hand mixer.
Add the eggs and mashed bananas until well mixed.
Add to the flour mixture and mix one low or by hand until well blended.
Drop by rounded teaspoonfuls onto the baking sheet, bake for 8-10 minutes are until centers.
To make the icing you’ll need:
1 cup confectioner sugar
2 teaspoons of milk
1 teaspoon corn syrup
1/4 teaspoon vanilla extract
Mix sugar and milk together, add corn syrup and vanilla until desired thickness, if to thick add more corn syrup.
Spoon onto cookies when cooled. Enjoy 🙂
