Chocolate Honey Cupcakes
We’ve been having so many rainy days lately that the grandkids and I decided to do a little baking. I’m using these silicone cupcake forms, I must say I was very skeptical that you could actually bake in something that seems like rubber. When we put them in the hot oven I kept peeking to see if they were melting! But no, they did not melt. The cupcakes popped right out of the molds and were baked absolutely perfect. I love them! Katie loves them because they are so colorful 🙂 I think they are great because I can use them over and over again.
We made a yummy recipe for chocolate honey cupcakes and we frosted them with of course homemade chocolate icing. Katie’s favorite.
You’ll Need:
3/4 cup milk
1/3 cup oil I used expeller pressed coconut oil
1 egg
1/3 cup sugar I used sucanat
1/3 cup honey
1 tablespoon vanilla
1 1/4 cup freshly milled whole wheat flour
1/3 cup cocoa powder
3/4 teaspoon baking soda
1/2 teaspoon baking powder aluminum free
In a large bowl combine flour, cocoa powder, baking soda and baking powder.
In another bowl add milk, oil, egg, sugar, honey and vanilla.
Mix well with a whisk.
Slowly add the dry ingredients to the wet ingredients,
Mix until combined completely.
Using a cupcake tin either line the tin or spray with oil to keep from sticking. I sprayed the silicone forms with oil before using them. They said you only need to do that the first time or two.
Bake at 325 F for about 15 – 18 minutes or until a toothpick comes out clean. Look at those faces… the kids loved them.
