I haven’t posted many recipes these past couple weeks. I have been so busy. I have lots to share. I have to find the time to get it all written down for you. I try to spend as much time outside as I can when the weather gets warm, and it has been so nice lately. My garden is coming along nicely. I will be posting about it in the weeks to come. Since it has been warm I decided to start making some picnic food. Getting ready for the big summer kick off in a few weeks. Today I am sharing a sweet & zesty coleslaw recipe. Sometimes we all need a little extra zing 🙂
You’ll need:
Shredded cabbage (about 5 cups)
1 carrot shredded
1/4 cup diced onion
1 cup mayonnaise (you can use low fat)
2 tablespoon champagne vinegar (or cider vinegar)
2 tablespoons sucanat or sugar
1/2 teaspoon cayenne pepper
1/4 teaspoon sea salt
fresh ground black pepper
In a large bowl mix the shredded cabbage and carrot with the onions.
In a small bowl whisk together all the remaining ingredients.
Pour the dressing over the cabbage and mix well.
Chill for a couple hours or over night. You can add more or less cayenne pepper and sugar to your taste. Enjoy 🙂
