Super Moist & Chunky Apple Cake

I had several apples that needed to be used in something before they spoiled so I decided to make a super moist and chunky apple cake. It’s a nice sweet dense cake with chunks of tart apples all through it. No icing for this cake, I think it’s perfectly sweet enough all by itself.
You’ll need:
1 cup applesauce I used my homemade
2 eggs
1 cup brown sugar, packed
1/2 cup coconut sugar or any other unrefined sugar or regular white sugar
2 teaspoons cinnamon
1/2 teaspoon salt
1 teaspoon vanilla extract
2 cups whole wheat flour
1 teaspoon baking soda
4 or 5 cups apples, cored, peeled and cut into small chunks

In a large bowl mix together the applesauce, eggs, both sugars, salt and vanilla until well blended.
Slowly add the flour and baking soda and mix. The batter will be thick.
Fold in the apple chunks.
Evenly spread the mixture into a greased and floured 13 x 9-inch cake pan.
Bake in a pre-heated 350 degrees F for 40 to 45 minutes, or until a toothpick inserted in the center comes out clean. Mine started browning before it was finished so I lightly covered it with foil. Make sure you keep an eye on your cake. 🙂
Cool on a wire rack and serve.
