I had several apples that needed to be used in something before they spoiled so I decided to make a super moist and chunky apple cake. It’s a nice sweet dense cake with chunks of tart apples all through it. No icing for this cake, I think it’s perfectly sweet enough all by itself.

You’ll need:

1 cup applesauce I used my homemade
2 eggs
1 cup brown sugar, packed
1/2 cup coconut sugar or any other unrefined sugar or regular white sugar
2 teaspoons cinnamon
1/2 teaspoon salt
1 teaspoon vanilla extract
2 cups whole wheat flour
1 teaspoon baking soda
4 or 5 cups apples, cored, peeled and cut into small chunks

Today I have my little helper with me, She’s so busy with school we don’t get as much time to bake together like we used to. This winter we will be working on a few cooking videos together, they are her idea, she loves working with videos. Now on to the recipe…

In a large bowl mix together the applesauce, eggs, both sugars, salt and vanilla until well blended.

Fold in the apple chunks.
