Sloppy Joes

Over the holiday weekend we smoked  3 pork shoulders, 2 slabs of ribs, and a beef brisket in our smoker. We actually made it into an all night party with some friends. They guys stayed up all night tending the smoker and the ladies sat around the fire  for awhile then went to sleep. The shoulders were smoked for 14 hours and they were incredible tasting. We had pulled pork the next day with the family. It worked out great because it was so hot on Monday afternoon and the cooking was already finished.

We had some leftover pork so I did an Internet search for a sloppy joe recipe and found lots to choose from. I picked this recipe from The Pioneer Woman. I changed it a little, not much.

You’ll need:

2 pounds meat ( I used the pulled pork but you could use ground beef )

2 Tablespoons butter

1/2 cup onion

1 green pepper

garlic

1 1/2 cups ketchup

1 cup water

2 Tablespoons brown sugar

1 Tablespoons chili powder

1 teaspoon dry mustard

2 tablespoons worcestershire

2 tablespoons tomato paste

Melt butter in fry pan or dutch oven. ( I started with a fry pan then switched to a dutch oven for more room half way through )

Add meat, onion,  green pepper and garlic to melted  butter. Saute until onion and green pepper are soft.

Add ketchup and water.

Add chili powder, brown sugar and dry mustard.

Mix then add tomato paste and worchestershire sauce .

Mix and simmer on low for at least 15 minutes.

I buttered my buns 🙂 and toasted them in a skillet. This way the juice doesn’t make the bun soggy.

They are ready to eat!

This was an easy recipe. I think it would be great with ground beef or ground turkey. It would freeze well. I didn’t have leftovers to freeze. I took the leftovers to work for the Doctor to share with his fiance. I love to share what I cook with others. 🙂
