Start Your Day with a Healthy Apple Banana Oatmeal Breakfast Muffin

I’ve always leaned towards eating healthy, my biggest challenge has always been eating breakfast. I don’t like eating right away in the morning, I like to have something I can easily take to work with me and eat a bit later. Of course, I could grab a quick store bought breakfast bar, they can be pricey, and you need to be careful because some are loaded with sugar and carbs, that is not a good way to start the day.
My New Year goals are to start my day with a healthy breakfast, strengthen my muscles by walking at least 30 minutes every day and doing my meditation daily.
This new year I decided to start out on the right foot and make sure I eat a good breakfast. Since I love oatmeal, and I’ve discovered over the past few years that you can put oatmeal in so many foods, not just cookies. So I decided to make my own breakfast muffins this way I control what goes in them. For the oatmeal, I choose Mom’s Best Quick Oats because they are whole grain, free of any artificial flavors or preservatives. No hydrogenated oils or high fructose corn syrup.
Another goal I have in 2017 is to make my first recipe video for the blog. Today is the debut of the video. Going out of my comfort zone can be a little scary. I hope you enjoy the video of my apple banana oatmeal breakfast muffin recipe.
The muffins don’t contain flour so they are gluten free. They also contain little fat as I use fresh fruit and applesauce for the oil in the recipe.
You’ll need:
2 1/4 cups Mom’s Best Quick Oats
2 teaspoons baking powder
1/2 teaspoon sea salt
3/4 cup water
1 tablespoon honey, I use local organic
2 ripe mashed bananas
1 small chopped apple I used granny smith
2/3 cup applesauce, I used my homemade
1 teaspoon ground cinnamon
2 eggs, beaten
Preheat the oven to 375 F
Using a large bowl, combine the oats, baking powder, and salt. Add the remaining ingredients and mix until completely combined.
Fill 12 muffin papers with the batter.
Bake for 15 – 18 minutes.
Cool completely on a wire rack before eating.
