Snicker Doodle Cookies

Katie and Tyler spent Sunday with us. Mommy and Daddy went to a football game, so we decided to make some cookies. Katie doesn’t like any cookie with chocolate chips in them. How weird is that? Can we still be related? Anyway I love snicker doodle cookies. They are so simple to make.  So much fun for little hands to roll the cookie balls in the sugar and cinnamon mixture.

Found a great recipe here. I adapted it using sucanat and whole wheat flour of course 🙂

You’ll need:

1 cup butter
1 1/2 cups sucanat/sugar
2 large eggs
2 3/4 cups whole wheat flour/all purpose flour
2 teaspoons cream of tartar
1 teaspoon baking soda
1/4 teaspoon salt
3 tablespoons sucanat/sugar
3 teaspoons cinnamon

In a large bowl mix the butter and sugar.

Add eggs and mix it all together. Katie loves cracking the eggs.

  

Combine flour, cream of tartar, baking soda and salt in another bowl.

Blend the dry ingredients into the butter mixture. Sometimes when Katie does this with her usual enthusiasm the flour goes everywhere. That’s okay it’ll sweep up.

 

Chill the dough and an ungreased cookie sheet in the refrigerator for 10 to 15 minutes.

In another small bowl mix together 3 tablespoons of sugar and 3 teaspoons of cinnamon.

Make the dough into 1 inch balls and roll in sugar/cinnamon mixture Place them evenly spaced on the chilled cookie sheet.

 

Bake at 350 degree F for 10 minutes.

Remove from the cookie sheet to cool. Toto was keeping watch for Katie.

These were so tasty. We ate them fresh from the oven. The whole wheat gives them an extra denseness that we love.
