Pumpkins and more pumpkins! I love pumpkins! My first attempt this year to grow my own pumpkins turned out great. My one plant produced 13 beautiful orange pumpkins of various sizes. All but 2 are still waiting on my sun porch for their time in the oven. I am in pumpkin heaven! 🙂 Today I want to share a simple but so delicious recipe for pumpkin butter. If you have never tried pumpkin butter you are in for a treat.
You’ll need:
1 cup sucanat or brown sugar
2 teaspoons cinnamon
2 teaspoon ginger
1 teaspoon nutmeg
1/2 teaspoon cloves
In a large pot on the stove mix all the ingredients together and bring to a boil stirring often. Be careful because it is thick and can splatter and splash out of the pot. Ouch!
Simmer over a low heat for about 30 minutes. Stir often.
That’s it. Refrigerate or can under pressure. It is so delicious!
