Orzo and Sausage Soup

When we get a cool day I get an urge to make soup. I will find something on hand to make a soup. I bought a box orzo a while back, I had never tried orzo until today.
What is Orzo? It’s a short cut rice shaped pasta. Actually perfect for soups. It is small and holds up well in soup. I was able to buy a whole grain wheat orzo.
You’ll need:
1 pound spicy ground sausage, I buy links and cut off the casings
4 cloves garlic minced
1/2 cup diced onion
6 cups chicken broth
1 large can 24 ounces crushed tomatoes
1 teaspoon seasoned salt
1/4 teaspoon cayenne pepper
1 bay leaf
1 small yellow squash cut into bite size pieces
1 small zucchini cut into bite size pieces
1 cup fresh baby spinach
8 ounces orzo cooked al-dente
Using a 6-quart large dutch oven add the ground sausage, onion and garlic together. Cook over medium heat until the sausage is no longer pink.
Drain off the excess fat.
Add your chicken broth, tomatoes, seasoning salt, cayenne pepper and bay leaf. Heat to a boil.
Simmer over low heat for 30 minutes.
Bring back to a boil.
Add the squash and zucchini
Reduce heat to a simmer and cook for 20 minutes
Add the spinach and orzo.
Simmer for 10 minutes.
Remove bay leaf.
Serve and enjoy.
