If you are a regular follower of the blog you know I don’t make anything fancy, I like the ingredients to be simple, using things I already have on hand. I have seen recipes where you coat your chicken with mayonnaise before you bread them. I thought I would try it and see how it works out. I breaded the chicken with corn flakes because I always have a box or two around. You can get a box of corn flakes for less then a dollar if you are a frugal shopper like me
With a sale and a coupon that is doubled, that makes for a great deal. Add a few spices and you’re good to go.
You’ll need:
2- 3 chicken breasts ( I used bone-in skinless chicken breasts )
1/4 cup mayonnaise ( I used Mayonnaise made with olive oil )
3 cups corn flakes ( depend on amount of chicken used )
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon cayenne pepper
fresh ground pepper
sea salt
I put my corn flakes in a plastic bag and crushed them with a rolling pin.

Add all the dry spices and mix.

Empty the corn flake mixture into a glass pie pan. You can coat it in the bag if you’d rather. I prefer to do it in a flat pan. 

Lightly coat your chicken with mayonnaise. Don’t over coat the chicken, it will make the breading soggy.

Evenly coat the whole piece of chicken with corn flakes and place on a parchment lined baking sheet.

Bake at 425 until 165 F. It took about 50 minutes for my bone-in. 20 -30 minutes for boneless.

It comes out nice and crispy. The mayonnaise makes the crumbs stick and the chicken very moist. We loved it.
